A lush & creamy summer delight!

- 6-8 ripe figs (cut in half)
- 1 cup mascarpone cheese
- 1 cup Greek yogurt
- 2 to 3 tablespoons honey
- 1 teaspoon vanilla extract
- 1 tablespoon butter (for grilling the figs)
Garnish
- Pistachios, chopped
- Fresh mint leaves
- Preheat a grill or grill pan over medium heat. Melt the butter and lightly brush the fig halves with it. Place the figs cut-side down on the grill and cook for about 2-3 minutes until they are caramelized and tender. Set aside to cool slightly.
- In a bowl, combine the mascarpone cheese, Greek yogurt, honey, and vanilla extract. Mix until smooth and well combined.
- In serving glasses, start with a layer of the mascarpone and yogurt mixture. Add a layer of grilled figs on top of the yogurt mixture. Repeat the layers, finishing with a layer of figs on top.
- Sprinkle chopped pistachios on top for crunch. Garnish with fresh mint leaves for a refreshing touch.
- Refrigerate the parfaits for about 30 minutes to allow the flavors to meld together. Serve chilled and enjoy!
