Ingredients
Beef & Aromatics:
- 2 tbsp peanut oil
- 500g ground beef
- 4 cloves garlic, finely chopped
- 3–4 fresh chillies, finely chopped
- 2 stalks lemongrass, white part finely minced
- 2–3 kaffir lime leaves, finely shredded
- ½ tsp white pepper
Marinade / Dressing:
- 2–3 tbsp fish sauce
- 2 tbsp lime juice
- 2 tsp sugar
Herbs & Aromatics for finishing:
- 4 spring onions, thinly sliced
- ½ cup fresh coriander, chopped
- ¼ cup fresh mint leaves, chopped
- ¼ cup fresh Thai basil leaves, chopped
- Sliced purple onion
Garnish:
- Shredded lettuce
- Fried shallots
- Cherry tomatoes, halved
- Cucumber slices
- Toasted peanuts, roughly chopped
- 2–3 tbsp nuoc mam (drizzle over just before serving)
Instructions
Heat peanut oil in a wok or large frying pan over medium-high heat. Add garlic, chillies, lemongrass, and kaffir lime leaves; stir-fry 30–60 seconds until fragrant. Add ground beef and break apart. Pour in fish sauce, lime juice, and sugar, toss to coat beef and cook until fully browned.
Fold in spring onions, coriander, mint, Thai basil, and sliced purple onion.
Serve spooned over shredded lettuce. Top with fried shallots, cherry tomato halves, cucumber slices, toasted peanuts, and drizzle nuoc mam over the top just before serving.
