Tropical Hot Cross Bun French Toast Skewers

  Ingredients

French Toast:

  • 4 hot cross buns, cut into 1-inch cubes (32 cubes total)
  • 6 eggs
  • 2 cups coconut milk
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 2 tbsp coconut sugar (for sprinkling after cooking)
  • 2 tbsp butter (for frying)

Topping:

  • 1 cup mango, diced
  • 1 cup pineapple, finely chopped
  • 1 banana, sliced
  • Pulp of 1–2 passionfruit

 To Serve:

  • Sweetened condensed milk, for drizzling
  • Coconut flakes
  • Extra coconut sugar to sprinkle

  Instructions

  • Cut hot cross buns into 1-inch cubes.
  • Whisk eggs, coconut milk, vanilla, and cinnamon to make the batter. Add diced buns into the batter and let soak for a minute before threading onto skewers.
  •  Heat butter in a frying pan over medium heat. Fry skewers until golden and cooked through.
  •  Sprinkle with coconut sugar while still warm. Drizzle with sweetened condensed milk, sprinkle coconut flakes, and top with diced tropical fruit and passionfruit pulp.
