Ingredients
French Toast:
- 4 hot cross buns, cut into 1-inch cubes (32 cubes total)
- 6 eggs
- 2 cups coconut milk
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
- 2 tbsp coconut sugar (for sprinkling after cooking)
- 2 tbsp butter (for frying)
Topping:
- 1 cup mango, diced
- 1 cup pineapple, finely chopped
- 1 banana, sliced
- Pulp of 1–2 passionfruit
To Serve:
- Sweetened condensed milk, for drizzling
- Coconut flakes
- Extra coconut sugar to sprinkle
Instructions
- Cut hot cross buns into 1-inch cubes.
- Whisk eggs, coconut milk, vanilla, and cinnamon to make the batter. Add diced buns into the batter and let soak for a minute before threading onto skewers.
- Heat butter in a frying pan over medium heat. Fry skewers until golden and cooked through.
- Sprinkle with coconut sugar while still warm. Drizzle with sweetened condensed milk, sprinkle coconut flakes, and top with diced tropical fruit and passionfruit pulp.
